Tofu steak with mushrooms


  • 1 piece of Tofu
  • 100g of cleaned, mixed mushrooms
  • Chives
  • 100ml dashi broth
  • 1 tablespoon of Mirin
  • 2 teaspoons of soy sauce
  • EVO oil
  • 1/2 teaspoon potato starch or Kuzu
  • Salt and Pepper
Preparation

Rinse the tofu with running water. Cut the tofu to half the thickness and dry all the slices well using kitchen paper. Season the tofu slices with salt and pepper, then sprinkle a little starch.

In a frying pan: put a drizzle of oil and arrange the tofu slices; cook them over medium heat until golden brown.

Meanwhile, chop the mixed mushrooms. In a glass, mix the dashi, mirin and soy sauce. Turn the tofu slices and cook them until golden brown; once cooked, set aside on a plate. In the same pan, pour the seasoning mix, add the mushrooms and cook them, covering them with a lid. Meanwhile, dissolve the starch by mixing with a tablespoon of water. When the mushrooms are cooked, add the dissolved starch to the water, and stir until it becomes thick. Place the cooked mushrooms on the previously cooked tofu slices. Sprinkle the chopped chives over the top.
