Preparation
Peel the carrot, the onion and potatoes, and cut them into cubes. Cut the meat or mushrooms into small chunks. Heat up the olive oil in a skillet and sauté the onions. Add the meat (or mushrooms) and cook until golden brown. Add the carrots, potatoes, and water, and bring to a boil. Remove the foam on the surface (if any), and simmer for 15 minutes. Turn off the heat, add the curry cubes, and mix the ingredients together. Once mixed evenly, turn the heat back on and cook for 10 more minutes, until the curry becomes thicker. Serve with rice or udon.
