Omurice, Japanese rice omelet with olive oil


  • 1 fistful of rice
  • 1/4 chopped onion
  • 1/2 chopped carrot
  • 4 chopped mushrooms
  • 2-3 teaspoons peas 
  • 3 teaspoons ketchup
  • 1 egg
  • 1 teaspoon milk
  • European olive oil
  • salt 
  • pepper
Preparation

Cook the rice following the instructions on the package. Chop all ingredients, and sauté the onions in oil. Add the peas and mushrooms, continue sautéing. Season with salt and pepper, add rice and mix with vegetables and ketchup. For the omelet, beat the eggs with the milk, add salt and pepper. Pour the olive oil in a pan (to taste) and add the beaten eggs. Cook the omelet over medium heat on both sides, being careful not to brown it. Add the rice and vegetable filling, placing it in the center of the omelet (thus leaving the edges "free"). Close the omelet like a calzone, and serve it on a plate piping hot.
