Japanese wheat noodles with trout and olive oil


  • Wheat noodles 350 gr
  • Extra virgin olive oil 2 tablespoons
  • Shiitake mushrooms 120 gr
  • Garlic 2 cloves
  • Ginger 1 tablespoon
  • Pak choi cabbage 225 gr
  • Spring onions 1
  • Sesame oil 1 tablespoon
  • Mirin 2 tablespoons
  • Soy sauce 2 tablespoons
  • Trout 2
  • Salt to taste
  • Pepper to taste
  • Fresh coriander 2 tbsp
  • Sesame 2 teaspoons
Preparation

Cook whole wheat noodles in a pot of boiling salted water for 7-10 minutes or according to package instructions. Meanwhile, heat the olive oil in a large frying pan. Add the shiitake mushrooms cut into 4 and sauté for 3 minutes. Add the finely chopped garlic, ginger and pak choi cabbage and continue to sauté for another 2 minutes. Drain the noodles and add them to the mushrooms, along with the diagonally cut spring onions, sesame oil, mirin and soy sauce. Stir and season with salt and pepper. Cut the trout into bite-sized pieces. Arrange the noodles on individual serving plates and lay the trout on top. Decorate the noodles with cilantro leaves and sesame seeds and serve immediately.
