Preparation
To prepare a good chicken Ramen, start with the broth by pouring a whole chicken into a large pot along with chopped carrots, peeled and chopped onions, chopped ginger and then add juniper berries. Cover with water and finally add the lemongrass previously smashed and cut by hand. While you let everything boil for about an hour, hard boil the eggs and once ready, peel them and cut them in half. After cleaning the chicken breast, cut it into thin slices and place it in a bowl with the soy sauce, oil and honey. Mix everything together, letting it rest for a few minutes. Grill the chicken slices for 3 minutes on one side and 2 on the other, sprinkle with sesame seeds and cut into strips. Pour the soy sauce into the broth from which you have removed the chicken and other ingredients, bring to a boil, and toss in the noodles. While the noodles are cooking, cut the spring onion, chili pepper, ginger into strips and remove the seeds. Finally, serve by drizzling with the broth and garnishing each bowl with the egg.
