Edamame Soup


● 300 gr of frozen green edamame soybeans without pods
● 500 ml of kombu dashi broth or vegetable broth(*)
● 1 tablespoon white miso
● EVO oil
● Black pepper
● Salt
Preparation Cook the edamame soybeans in lightly salted boiling water.
When the soybeans are cooked, blend them with a blender adding some of the cooking water until creamy.
Prepare the dashi broth or vegetable broth. In case kombu or unsalted vegetable broths are used, add 1 tablespoon of white miso and dissolve it in the broth.
Mix the edamame cream with the broth, adjust the flavor with salt and heat over low heat.
Serve hot, or cold if in summer, and enjoy with a little pepper and EVO oil to taste.
