- 300 g of type 1 flour
- 180 g of water at 25°C
- 10 g fresh brewer's yeast
- 3.5 g malt
- 50 g extra virgin olive oil
- Salt to taste
Dissolve yeast in water, add all remaining ingredients except salt, and knead for 5 minutes. Add salt and knead for another 5 minutes.
Shape the dough into loaves and lay them on a baking sheet, greased with extra virgin olive oil, and let rise for 60 minutes.
Cut the loaf into strips of the desired weight, roll them until you get breadsticks.
Lay the breadsticks on a baking sheet and let rise for 60 minutes. Bake at 200°C for about 15 minutes.
