Salted cod fritters


Ingredients:

  • cod (400 gr)
  • potatoes (250 g)
  • 1 onion
  • 1 bunch of parsley
  • 4 eggs
  • pepper, nutmeg (just enough)
  • olive oil for frying
Preparation Before being cooked, the cod must be soaked in cold water for about twenty-four hours. Once ready, the cod is placed in a saucepan with the potatoes and will cook for about half an hour. Once cooked, it should be cleaned and deboned. Next, peel the potatoes. Chop the ingredients to make a puree. Then add the finely chopped onion and chopped parsley to the mixture. The eggs are added one at a time, mixing to obtain a homogeneous blend without lumps. Finally, add some ground pepper and a sprinkle of nutmeg to taste. With the dough, create long-shaped fritters and then fry them in olive oil and then leave to dry on absorbent paper to remove excess oil. Can be served either cold or hot.
