Biscuits with extra virgin olive oil


Ingredients:

  • 2 eggs
  • sugar (80 g)
  • Extra virgin olive oil (20 gr)
  • flour (180 g)
  • salt (a pinch)
  • lemon juice
  • vanilla (seeds)
  • baking powder (two teaspoons)
Preparation Take a bowl and beat the eggs and sugar with a whisk: you will get a nice soft foam. Add extra virgin olive oil, lemon juice and vanilla and then start mixing again. At this point add the flour (180 g), salt and yeast. Mix it up and then shape and place the cookies on baking paper properly distanced from each other. Insert in the oven for 15 minutes at 180 degrees or until they reach a nice color.
