Batter-Fried Greens


200 gr Flour Type 00

200 gr Water

600 gr Vegetables cut into pieces

1 egg yolk

salt to taste

extra virgin olive oil

Preparation

Mix 100 gr. of flour with the egg, water and half a teaspoon of salt, until you get a not too thick batter. Heat plenty of oil in a pan or pot. To check if the oil is hot enough, dip in a spoon or wooden toothpick: small bubbles should form. Roll the vegetables in the flour, then dip them in the batter and brown them in the hot oil. Leave to drain on kitchen paper. Optionally you can add a few drops of lemon juice. Enjoy your meal.
