Cauliflower fritters


  • Cauliflower - 450 grams
  • Grated parmesan cheese - 100 grams
  • Eggs - 2
  • Breadcrumbs -2 tablespoons
  • Parsley - 1/2 bunch
  • Olive oil 
  • Salt
Preparation

Clean and wash the cauliflower. Cut out florets and cook in plenty of salted water for about 10-15 minutes. Drain the cauliflower and let it cool. In a bowl, beat the eggs with the chopped parsley, Parmesan cheese and pepper. Add the breadcrumbs and mix the ingredients. Mash the cooked cauliflower with the help of a fork and add it to the previously obtained mixture. Mix it all together until you get a fairly thick consistency. Form small balls with your hand and fry them in plenty of hot oil until golden brown. Once cooked, place your cauliflower fritters on a sheet of paper towels. You can serve them either hot or cold.
