- Almond flour 450 g
- Baking soda 1 teaspoon
- Salt 1 pinch
- Cinnamon powder 1⁄2 teaspoon
- Sugar 80 g
- Eggs 2
- Extra-virgin olive oil 2 tablespoons
- Vanilla 1 teaspoon
- Lime juice 2 tablespoons
- Lime zest 1.5 teaspoons
- Honey to taste
Preheat the oven to 220 °C. Grease muffin tins. Combine almond flour, baking soda, salt, cinnamon and sugar in a bowl. Set aside. In a small bowl, combine eggs, olive oil, vanilla and lime juice. Combine the wet and dry ingredients and mix until well combined. Also, add the lime zest into the mixture and mix, then divide the mixture into muffin molds, filling each to the brim. Bake at 220 °C for 5 minutes, then lower to 170 °C and continue for another 20 minutes until a toothpick inserted into a muffin comes out clean. When finished, cool the muffins on a wire rack and serve to taste with honey or jam.
