Clean the mushrooms, possibly without washing them (or if needed put them quickly underwater and dry them well), cut them into very thin slices. Heat the extra-virgin olive oil in a frying pan, add the garlic cloves and remove them as soon as they turn golden. Add the mushrooms, salt and pepper and cook for 5-6 minutes, stirring twice or three times. Allow the sauce to dry, toss the mushrooms with a little olive oil, add the chopped parsley, stir and serve immediately.
