Did you know that fats are actually indispensable for one's health?
It may sound like a contradiction but without fats, absorbing vitamins and other beneficial substances necessary for the functioning of the body would not be possible.
However, for this process to work properly, these fats must be 'good', that is, of vegetable origin and unsaturated.
Extra virgin olive oil is, among vegetable oils, the most complete and beneficial because it is a source of vitamins A, E, D, K and carotenoids.
As Smartfood experts highlight on the European Institute of Oncology's (EIO) website, the beneficial action of this extract reaches its peak when the oil is used as a raw condiment because it maintains all its chemical and organoleptic characteristics.
"Extra virgin olive oil, thanks to its lower acidity (according to EU law extra virgin olive oil cannot have a higher acidity level than 0.8 per cent) goes bad less easily than other oils and remains intact longer. Despite this, the oil should be stored in a cool place away from the light. Knowing and respecting the oil is a duty that shall be followed at home as much as in a restaurant'' experts say.
Experts from Slow Food Italy (the international nonprofit organization that works to promote good, clean and fair food around the world) put forward a set of guidelines to help choose and use the best olive oil: "Prefer monovarietal oils and use them raw; keep at least two types of quality oil in the kitchen: a fruity one, for sauces and dishes with long cooking times and a more herbaceous one, for delicate and fresh dishes with vegetables and grains."
Important: the bitter and spicy taste is typical of good extra virgin olive oil, so stay away from oils that lack these qualities. The characteristic taste is provided by the presence of polyphenols which are beneficial substances that fight cell oxidation and aging.
Using European olive oil is easy and good for you; having two different olive oils in your kitchen will have you prepared for a variety of dishes and recipes.
