According to Riza experts, always avoid adding water, salt and spices during frying: "they accelerate the alteration of fats. Salt and spices should be added to the food preferably after frying."
"Too high temperatures cause the alteration of oils and fats. The ideal would be to equip the fryer with a thermostat," to avoid bringing the temperature of the oil higher 180 degrees.
"A heavily used oil can be recognized by its brownish color and its tendency to produce smoke during frying": keep an eye out to know when it should be changed.
"After frying, it is good to facilitate the elimination of excess oil absorbed by the food by draining it".
If a fryer is used, it is always necessary to clean "thoroughly the filter and the oil basket"; if a frying pan is used, the bottom must be well degreased. "Charred crusts and the remains of an old oil accelerate the alteration of the oil".
"Avoid adding fresh oil to used oil; fresh oil in contact with used oil will alter much more quickly".
It is essential to protect oils and fats from light: "light makes them less resistant and more unstable when subjected to high temperatures".
