Olive oil and frying pans: eight golden rules to fry your food

Fried foods are delicious, but frying should be done following some simple rules to avoid “altering the oil and causing the formation of harmful substances for the body.”

The magazine Riza, the leader in Italy in the field of natural wellness and medicine, nutrition and psychology, has listed 8 simple tips to fry your food healthily: 

 

  1. The condiments and spices should always be added after

According to Riza experts, always avoid adding water, salt and spices during frying: "they accelerate the alteration of fats. Salt and spices should be added to the food preferably after frying."

  1. Never fry above 180 degrees

"Too high temperatures cause the alteration of oils and fats. The ideal would be to equip the fryer with a thermostat," to avoid bringing the temperature of the oil higher 180 degrees.

  1. Change the oil during long frying sessions

"A heavily used oil can be recognized by its brownish color and its tendency to produce smoke during frying": keep an eye out to know when it should be changed.

  1. Always remove grease well

"After frying, it is good to facilitate the elimination of excess oil absorbed by the food by draining it".

  1. Keep clean all cooking equipment used

If a fryer is used, it is always necessary to clean "thoroughly the filter and the oil basket"; if a frying pan is used, the bottom must be well degreased. "Charred crusts and the remains of an old oil accelerate the alteration of the oil".

  1. Always use fresh oil

"Avoid adding fresh oil to used oil; fresh oil in contact with used oil will alter much more quickly".

  1. Keep oil in the dark

It is essential to protect oils and fats from light: "light makes them less resistant and more unstable when subjected to high temperatures".

  1. Use the right oil

"Always fry using suitable oils and fats." To know which oils are suitable for frying, Riza has made available a useful table that shows olive oil is the only type suitable for all types of cooking methods:
