Olive oil, a guide on how to store it properly

Some people prefer to buy one bottle at a time while others prefer to stock up. Either way, it is important to know how to store olive oil properly to preserve the beneficial virtues and organoleptic qualities of this ‘golden liquid’. 

The Italian Association of the Oil Industry, which among its objectives includes raising awareness of the properties of oil among consumers, created a guide on how to store olive oil. 

 Here are the rules to follow: 

  • keep extra virgin and virgin olive oil away from light

strong lighting affects the quality of the oil. In addition to avoiding exposure to direct sunlight or artificial light, it is better to choose an oil contained in a dark bottle; 

  • keep the oil away from heat

High temperature damages the product irreversibly. So be careful not to place it too close to the stove, radiators or under the sun; 

  • keep the oil away from strong odors

The oil acts like a sponge for all volatile substances. Therefore it should be kept away from paint cans, highly perfumed detergents, rooms with mold or filled with smoke; 

  • neither too cold nor too hot, better somewhere in between

avoid thermal changes that damage its quality. If it is kept in the cellar, better a cool temperature, that ranges between 16 ° and 20 °; 

  • beware of air currents

After using the oil, be sure to close the bottle properly, to avoid oxidation which damages the oil over time. 
 

By following these rules, the oil will preserve its qualities and features so important for our health and excellent for our dinner tables - both at home and in restaurants.  

Also, beware of old cruets when eating out! Restaurants and bars should have ‘anti- refill’ bottles, which protect the product and preserve its quality.
