Olive oil and Japanese teppanyaki: a flawless combination of taste and style

More than just a cooking method, Teppanyaki is the epitome of Japanese cuisine.

 

"This technique - writes Alessia Dalla Massara on the website Agrodolce.it - originated in the Japanese restaurant Misono in 1945, with the aim of creating an original mixture between Western cuisine and Japanese cooking on the so-called teppan. The term teppanyaki is made up of two distinct words: teppan, which is the iron plate, and yaki, which is the grill. Teppanyaki means to cook food on a hot iron plate in direct contact with the flame and that will be used both as a cooking surface and as a serving surface for the food.

"Teppanyaki cuisine - explains Dalla Massara - was meant as a simple and fast way to cook and eat from the same plate using chopsticks (Hashi) to eat the food out of the still-hot iron plate. Each step of this cooking technique is visible: in Japanese restaurants, it is common to witness the spectacular acrobatics of the chefs who, with just a few utensils - usually a large spoon, a fork and two spatulas - creates exquisite grilled recipes".
