Bread, oil and avocado
Let's call it avocado toast. For the simplest version place some slices of avocado on toasted bread and season with a drizzle of oil.
Bread and oil with salmon
Some people may prefer using butter instead of olive oil, as per tradition in northern Europe, but we suggest you give olive oil a try. Also, add some lemon juice and some ground white pepper or fennel.
Bread, oil and garlic
A recipe for strong palates. Simply toast a slice of bread, dress it with some oil and then rub it with a clove of garlic. You can then sprinkle it with grated Parmesan cheese before baking it in the oven for a few minutes. In the American version, chives are also used.
Bread, oil and tomato
The ever loved classic bruschetta. You can enrich it with grated feta or diced cucumber and chopped mint or basil leaves. For a more kid-friendly version of bruschetta, rub the tomato on the bread to spread the juice, instead of placing the slices on the bread.
Bread and oil with pecorino
A real treat that can be prepared in just a few minutes in the microwave or under the oven grill. Simply pour some oil on the slices of bread with some aged pecorino cheese and then pop it all in the oven. The cheese will melt and wrap around the bread, but the base will remain crispy.

Cut zucchini lengthwise with a mandoline. You will get a shape similar to tagliatelle. Dress them with oil, salt, pepper and lemon juice and place them on slices of bread with some oil and goat cheese.

If you have some leftover bread that is a little dry, cut it into slices and moisten it with water. Then place it on the base of a cake pan, crush it well to soften it and sprinkle it with oil, tomato puree, salt and capers. Bake in the oven for 30 minutes at 180 degrees and there’s your pizza-like bread.

A simple yet tasty dish that can easily become a second-course choice. Wholemeal bread with cooked cannellini beans is the perfect match! Wash the beans well and season with oil, salt and pepper.
